Roasted Green Beans

This delicious and couldn’t be simpler recipe is from Andrea Chesman’s book:  The Roasted Vegetable

I highly recommend this book to anyone who wants to find some excitement in their veggie dishes.  This is the first recipe I’ve tried and we LOVED it.   I will make it again and again!

Roasted Green Beans

2lbs fresh green beans 

2 tbsps extra virgin olive oil

Kosher or coarse table salt

Preheat oven to 500 degrees.  Drizzle a shallow roasting pan (or I used a cookie sheet with fairly high edges) with about half the olive oil.  Place the green beans in a single layer on the pan, drizzle with remaining olive oil, and toss to coat.  Roast in the preheated oven for about 15 minutes, shaking and turning a couple of times to brown on all sides.   When done, sprinkle with the salt to taste (a few pinches was fine) and transfer to a pretty dish to serve!  Eat these immediately – though once you try them I can’t imagine you’d have any left overs.  Enjoy!
